Main Ingredients
2 cups of chickpea flour (alternatively called garbanzo bean flour).
one cup of room-warm water
2 tablespoons of olive oil
1 teaspoon of baking powder
1/2 teaspoon of sea salt
1 teaspoon baking powder (I also add one tablespoon of apple cider vinegar to help activate the baking powder)
Optional toppings: millet, poppy, sesame, sunflower seeds, or such spices as rosemary.

Optional Add-Ins for Flavor
1 tablespoon of ground flaxseeds or chia seeds, to increase the fiber quantity.
1 teaspoon of garlic powder
1 teaspoon of onion powder
1/2 teaspoon of inferior color and slight taste of Curcuma

Instructions

Prepare the Dry Ingredients

In a large mixing bowl add your chickpea flour, baking powder & sea salt to get the dough ready. In case you want to include the ground flaxseed or chia seed, it is the right time to do so.

There is always a hint of bitterness felt when the chickpea flour is used, but this can be well manipulated by the use of olive oil and vinegar. Not only does this create a layered structure, which is important because chickpea flour can make bread a little heavier than wheat flour, but this dough is also made to be light and fluffy.

Mix Wet Ingredients

In another bowl mix the water, olive oil, and apple cider vinegar separately. Stream in the wet mixture with the dry ingredients and mix until the combine is smooth. You should have the consistency of a thin pourable batter, slightly thicker than pancake batter but not as stiff as for a dough.

If you desire to make your chickpea bread more tasty you can at this point mix garlic powder, onion powder, or turmeric. All these spices add heat to the bread and make the bread more savory rather than sweet.

Let the Batter Rest

Make the batter medium thick and let it stand for about 10 minutes so that the ingredients particularly the chickpea flour will soak up the water completely. This resting time also helps the baking powder to start acting as it will make your bread softer.

When you are ready to bake, slide your pan into the oven and let it get preheated before you pour your batter into the pan. In the remaining batter, you can spread the rest of the seeds or herbs on top. Bake for 35-40 minutes or until golden brown on top and when a toothpick is inserted in the middle it comes out clean.

Cool and Serve

Remove the chickpea bread from the baking pan and let it cool for about 10 minutes, then, let it cool completely on the wire rack. Once cool, slice and enjoy! The chickpea bread is best eaten with hummus, and avocado, and is also good used as a sandwich base.
