This classic Irish soda bread is quick, easy, and requires no yeast—perfect for last-minute baking. Made with just a handful of pantry staples, it bakes up with a golden crust and a soft, tender crumb. Enjoy it warm with butter, jam, or alongside your favorite hearty stew. Optional raisins add a touch of sweetness for a traditional twist.

4 cups all-purpose flour

1 tsp baking soda

1¾ cups buttermilk

1 tbsp sugar (optional)

½ cup raisins or currants (optional)
Instructions

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

In a large bowl, whisk together flour, baking soda, and salt. Stir in sugar and raisins if using.

Make a well in the center and pour in the buttermilk. Stir with a wooden spoon or your hands just until a dough forms—do not overmix.

Turn the dough out onto a lightly floured surface and knead briefly, just to bring it together.

Shape the dough into a round loaf and transfer it to the prepared baking sheet.

Use a sharp knife to cut a deep “X” across the top of the dough.

Bake for 35–40 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.

Let cool slightly before slicing. Serve warm with butter.
Notes
If you don’t have buttermilk, make your own by adding 1 tbsp of lemon juice or vinegar to 1¾ cups of milk and letting it sit for 5 minutes.
For a more savory loaf, omit the sugar and raisins.
Best enjoyed the day it’s baked, but can be toasted the next day.
